Christmas Eve Critter is Cooked!

Mmmmmm… Been cooking Christmas Eve’s main course all day! We started last night with a brine and soaked him all night. About 8AM I got him out, patted him dry, then started the prep work – mainly scoring the skin. If you’ve never done this it really isn’t far off from trying to delicately slice through a football with a spoon. I had a knife sharp enough to split hairs and it still took the better part of an hour to score this bad boy. After that we made him an aluminum tent and popped him in the oven for a slow and low cook. Nine hours later he popped out long enough for a generous coating of glaze – garlic, salt, pepper, honey mustard, brown sugar, and two good shots of Mr. Beam’s finest. Back in the heat for almost two more hours. He’s downstairs resting at the moment. We’re going to let him cool, slice, taste, then off to the fridge. Smells damn good if I say so myself.
